Ingredients for 4 servings:
1. 1/2 cup olive oil
2. 4 medium garlic cloves, thinly sliced
3. 1 medium red pepper, stemmed, seeded and cut in a 1/8-inch dice
4. 1 1/4 lbs medium shrimp, peeled
5. 3 tablespoons lemon juice
6. 3 tablespoons dry sherry
7. crushed red pepper flakes, to taste
8. salt, to taste
9. 3 tablespoons parsley, finely chopped, for garnish
Directions:
1. Heat the oil in a large skillet over medium-high heat.
2. Add the garlic, pepper and shrimp.
3. Cook for about 2 minutes, stirring constantly, just until the shrimp turn pink.
4. Increase the heat to high.
5. Add the lemon juice, sherry, hot red pepper and salt to taste and bring to a boil.
6. Serve immediately, sprinkled with parsley.
