Ingredients for 6 servings:
1. 1/4 cup olive oil, extra virgin
2. 2 tablespoons butter
3. 1 onion, small diced finely
4. 6 garlic cloves, chopped finely
5. 4 lbs tomatoes, oven roasted and coarse chopped (see reference above)
6. 1 cup chicken broth
7. 1/4 cup white wine
8. 1 ounce basil, fresh chopped
9. salt, to taste
10. pepper, to taste
Directions:
1. Heat oil and butter in a sauce pan.
2. Add onion and garlic being careful not to burn, cook about 8 minutes until soft.
3. Add broth and wine and heat to simmer.
4. Add chopped and/or pureed tomatoes and bring to a boil.
5. Simmer on low for a minimum of 30 minutes or until the sauce begins to condense and thicken.
6. Add basil and cook for a few more minutes.
7. Add salt and pepper to taste.
