Ingredients for 6 servings:
1. 1 (4 1/2 ounce) can green chilies
2. 1 cup mushroom, sliced
3. 16 ounces monterey jack cheese, grated (or Cheddar or your favorite cheese)
4. 12 ounces sausage
5. 1 (12 ounce) can evaporated milk
6. 8 eggs
7. 2 tablespoons flour
Directions:
1. Preheat oven to 300-degrees F.
2. Butter a 9 x 13-inch baking dish.
3. Brown sausage in skillet with mushrooms. Drain well and set aside.
4. In a large bowl mix together the cheese, chilies, sausage and mushrooms. Pour mixture into prepared dish.
5. Whisk together milk, flour and eggs and pour over sausage/cheese mixture.
6. Bake for one hour or until done.
