Ingredients for 8 servings:
1. 4 slices smoked bacon, cut into bite size pieces
2. 1 1/2 lbs ground sirloin
3. 29 ounces pinto beans
4. 15 ounces tomato sauce
5. 6 ounces tomato paste
6. 10 ounces beef broth
7. 6 ounces dark beer
8. 2 cups strong coffee
9. 1 white onion, chopped
10. 4 serrano chilies, chopped
11. 3 1/2 tablespoons chili powder
12. 1 teaspoon hot sauce
13. 1 teaspoon cayenne pepper
14. 1 teaspoon oregano
15. 1 tablespoon cumin
16. 3 tablespoons garlic, minced
Directions:
1. Fry bacon until crispy.
2. Add onions, garlic and meat to the pot – brown beef.
3. Add tomatoes, beer, coffee, paste and broth to pot.
4. Add spices, chilies, and beans to the pot.
5. Lower heat to a simmer.
6. Simmer for 1 hour.
7. Tastes best refrigerated overnight.
8. Serve piping hot, topped with shredded cheese and Fritos or a dollop of sour cream.
