Ingredients for 4 servings:
1. 4 boneless skinless chicken breast halves
2. 2 tablespoons honey
3. 1 tablespoon fresh lime juice
4. 1 teaspoon finely grated lime peel
5. 1 teaspoon salt
6. 1 teaspoon chili powder
7. 1/2 teaspoon ground cumin
8. 1/2 teaspoon black pepper
9. 1/8 teaspoon cinnamon
10. 2 cups soft breadcrumbs
11. 1/4 cup chopped cilantro or 1/4 cup parsley
12. 2 teaspoons vegetable oil
Directions:
1. Combine honey, lime juice, peel, salt, chili powder, cumin, pepper, and cinnamon in a shallow bowl or pie plate.
2. In a large bowl combine the bread crumbs, chopped cilantro, and vegetable oil.
3. Dip chicken in honey mixture, turning to coat well.
4. Add coated chicken to the bread crumb mixture, patting on crumbs.
5. Transfer to a foil-lined baking pan.
6. Bake at 425° for 18 to 25 minutes, or until chicken is cooked through.
7. Serves 4.
