Spinach Salad With Sweet Dijon Vinaigrette

 

Ingredients for 8 servings:
1. 1/4 cup maple syrup, use 100% pure
2. 1 medium shallot, minced
3. 2 tablespoons red wine vinegar
4. 1 tablespoon canola oil
5. 1 tablespoon Dijon mustard
6. 1/4 teaspoon salt
7. 1 teaspoon garlic, minced
8. 1 cup mushroom, sliced
9. 1/2 medium red onion, sliced vertically
10. 4 slices bacon, cooked and crumbled
11. 1 (10 ounce) package fresh spinach

Directions:
1. Combine first 7 ingredients in a small bowl, whisking together, to make the vinaigrette.
2. Add remaining ingredients in a large serving bowl; toss with vinaigrette when ready to serve.
