Steamed Corn and Edamame

 

Ingredients for 4 servings:
1. 6 ears fresh corn (removed from cobs)
2. 3 cups edamame (thawed)
3. 4 green onions (minced)
4. 2 garlic cloves (minced)
5. 2 tablespoons Dijon mustard
6. 3 tablespoons balsamic vinegar
7. 1 1/2 tablespoons toasted sesame oil
8. 1 1/2 tablespoons canola oil
9. 6 eggs (beaten)
10. 1/2 cup basil (minced)
11. salt & fresh ground pepper (to taste)
12. 2 sheets toasted nori (ground)

Directions:
1. Toss together the corn, edamame, onions, garlic, dijon, vinegar and oils.
2. Line a colander with foil. Fill with mix.
3. Steam, covered for 13 minutes.
4. Meanwhile, beat together the eggs, basil, salt and pepper.
5. Heat a sprayed wok. Add mix. Cook until set.
6. Chop. Add to corn mix.
7. Top with nori.
8. WOW!
