Stilton and Pear Salad

 

Ingredients for 4 servings:
1. 2 tablespoons white wine vinegar
2. 1/2 teaspoon Dijon mustard
3. salt and pepper, to taste
4. 1/4 cup olive oil
5. 6 cups red and green lettuce
6. 1 large red bartlett pear, cored, cut lenghtwise into 1/4-inch slices
7. 1/2 cup pecans, chopped, lightly toasted
8. 1/4 lb Stilton cheese, crumbled

Directions:
1. In a small bowl, whisk together vinegar, mustard, and salt and pepper to taste.
2. Add the oil in a stream, whisking until emulsified.
3. Toss the lettuce with half the dressing and divide among 4 plates.
4. Arrange pear slices decoratively on top.
5. Divide stilton and nuts among the salads and drizzle with the remaining dressing.
