Ingredients for 6 servings:
1. 1 (16 ounce) bag frozen broccoli, carrots and cauliflower, thawed
2. 1 (10 1/2 ounce) can cream of mushroom soup, undiluted
3. 1 cup shredded swiss cheese
4. 1/3 cup sour cream
5. 1/4 teaspoon pepper
6. 1 (4 ounce) jar pimiento, chopped
7. 1 (2 7/8 ounce) can French-fried onions
Directions:
1. In a mixing bowl, combine veggies, soup, 1/2 cup of cheese, sour cream, pimento and 1/2 cup of onions.
2. Pour into a 1 quart baking dish and bake covered at 350° for 30 minutes.
3. Top with remaining cheese and onions.
4. Bake uncovered for 5 minutes.
