Ingredients for 4 servings:
1. 1/4 cup thinly sliced green onion
2. snipped fresh chives
3. 2 tablespoons olive oil
4. 2 tablespoons white wine vinegar
5. 2 teaspoons honey mustard
6. 1/8 teaspoon black pepper
7. 4 small tomatoes, sliced (SEE NOTE)
8. 1/4 cup crumbled feta cheese with dried basil and tomato (1 ounce) or 1/4 cup plain feta cheese (1 ounce)
9. 2 small cucumbers (about 2 cups) or 2 small zucchini, cut into 2-inch strips (about 2 cups)
Directions:
1. Dressing:
2. In a screw-top jar combine green onions, oil, vinegar, mustard, and pepper.
3. Cover and shake well.
4. Chill until needed.
5. To Serve:
6. NOTE: use red and/or yellow tomatoes.
7. Stack tomato slices.
8. Top with feta cheese.
9. Shake dressing; drizzle over tomatoes. Serve with cucumbers.
