Ingredients for 4 servings:
1. 1 1/2 cups mashed potatoes
2. 7 ounces tuna
3. 1/4 cup canned corn
4. 2 tablespoons chopped parsley
5. 1 cup bread, crumbs
6. salt and pepper
Directions:
1. Place mashed potato in a bowl. Stir in tuna and corn and parsley.
2. Season to taste with salt and pepper.
3. Shape into 8 patties.
4. Press the fish cakes into bread crumbs to coat lightly.
5. Cook on a moderate grill until crisp and golden, turning once.
