Vegan Breakfast Cookies

 

Ingredients for 1 servings:
1. 1/4 cup brown sugar
2. 1/4 cup agave nectar
3. 1/4 cup soymilk
4. 1/4 cup non-hydrogenated vegan margarine
5. 6 ounces silken tofu
6. 1 tablespoon vanilla
7. 1 banana
8. 2 cups whole wheat pastry flour
9. 1 teaspoon baking powder
10. 1/4 teaspoon salt
11. 1 teaspoon cinnamon
12. 1 cup oatmeal
13. 1 large apple
14. 1 cup carrot, shredded
15. 1 cup pecans, chopped

Directions:
1. Cream first 7 ingredients. (May be chunky from banana).
2. Sift together dry ingredients and slowly add into the creamed mixture.
3. Fold in Apple, carrot, and nuts.
4. Bake for 14 minutes at 350.
