Vegetable Beef and Barley Soup

 

Ingredients for 1 servings:
1. 1 1/2 cups lean roast beef, diced
2. 1 (28 fluid ounce) can diced tomatoes
3. 1 1/2 cups potatoes, diced
4. 1 cup peas
5. 1/2 cup onion, diced
6. 1 1/2 cups carrots, sliced
7. 1 1/2 cups celery, sliced
8. 1 cup pot barley
9. 8 cups low sodium beef broth

Directions:
1. Add broth, meat, vegetables and barley to large pot.
2. Bring to just below boiling on medium heat.
3. Reduce to low heat, cover, and simmer for 1 hour.
