Ingredients for 10 servings:
1. 1 (28 ounce) can diced tomatoes
2. 1 (150 g) package frozen chopped spinach
3. 1 carrot, grated
4. 1 onion, chopped
5. 2 portabella mushrooms, chopped
6. 3/4 cup water
7. 2 teaspoons butter, melted
8. 4 teaspoons powdered milk
9. 1 teaspoon basil
10. 1 teaspoon parsley
11. 1 teaspoon italian seasoning
12. 1/2 teaspoon coriander
13. 2 garlic cloves, crushed
14. 2 (5 1/2 ounce) cans tomato paste
15. 4 teaspoons parmesan cheese, grated
Directions:
1. Combine tomatoes, spinach, carrot, onion, mushrooms, celery, water, butter, and milk powder in a blender and blend well.
2. Pour into a crock pot and add seasonings, tomato paste, and cheese.
3. Cook on low for 8 hours or high for 5 hours.
4. Serve over your favourite pasta.
