Vegetarian Burritos

 

Ingredients for 4 servings:
1. 8 10-inch flour tortillas
2. 1 tablespoon olive oil
3. 1 medium carrot, scraped and shredded
4. 1 small onion, chopped
5. 1 clove garlic, minced
6. 1 (8 ounce) can tomato sauce
7. 1 (10 ounce) package frozen chopped broccoli, thawed and well drained
8. 1 (10 ounce) package frozen whole kernel corn, thawed and drained
9. 1 (15 ounce) can black beans, drained and rinsed
10. 1 tablespoon chili powder
11. 1/2 teaspoon salt
12. 1/4 teaspoon ground cumin
13. 1 dash hot sauce
14. 1 (8 ounce) package shredded cheddar cheese
15. commercial salsa
16. commercial guacamole

Directions:
1. Heat tortillas according to package directions; keep warm.
2. Heat olive oil in a large skillet.
3. Add carrot, onion, and garlic; cook over low heat, stirring constantly, 2 minutes.
4. Stir in tomato sauce and next 7 ingredients; cover and simmer 5 minutes.
5. Spoon about 1/2 cup vegetable mixture evenly down center of each tortilla; sprinkle evenly with 1/4 cup Cheddar cheese.
6. Fold burrito style.
7. Serve immediately with salsa and guacamole.
