Ingredients for 6 servings:
1. 1/2 cup minced onion
2. 1 tablespoon oil
3. 3 1/2 cups cooked macaroni
4. 1 3/4 cups shredded cheddar cheese
5. 1 teaspoon parsley
6. 1/2 cup evaporated milk
7. 1 3/4 cups cottage cheese
8. 1/2 teaspoon salt
9. 1/4 teaspoon pepper
Directions:
1. Sauté onions in oil until tender.
2. Add macaroni, cheddar cheese, and parsley.
3. Mix milk, cottage cheese, salt and pepper until smooth; mix well.
4. Add to macaroni mixture, mix well.
5. Pour into a greased 2 qt casserole.
6. Bake, uncovered, at 350* for 25 minutes.
