Ingredients for 4 servings:
1. 1 cup yellow squash, cooked and mashed
2. 1 egg, beaten
3. 1/3 cup all-purpose flour
4. 1/3 cup cornmeal
5. 1 teaspoon baking powder
6. 1/2 teaspoon salt
7. 1 medium onion, grated
8. vegetable oil
Directions:
1. Combine the cooked squash and egg, stirring well.
2. Combine flour, cornmeal, baking powder and salt, stir well.
3. Add squash mixture and onion; stir until blended.
4. Drop squash mixture by level tablespoonful into hot oil.
5. Cook until golden brown, turning once. Drain well on paper towels.
