Ingredients for 24 servings:
1. 3 cups all-purpose flour
2. 2 cups white sugar
3. 1 teaspoon baking powder
4. 1 teaspoon baking soda
5. 1 teaspoon salt
6. 2 teaspoons vanilla
7. 1 teaspoon cinnamon
8. 1 cup vegetable oil
9. 3 eggs, beaten
10. 1 cup shredded coconut or 1 cup shredded flaked coconut
11. 2 cups raw unpeeled grated zucchini
12. 1/2 cup walnuts
Directions:
1. Preheat oven to 325 degree F.
2. Grease 2 loaf pans.
3. Combine all ingredients in mixing bowl.
4. Mixture will be very thick.
5. Pour equal amounts of batter into 2 loaf pans.
6. Bake 1 hour and 15 minutes or until done.
