Ingredients for 4 servings:
1. 3 cups chopped zucchini
2. 2 ripe tomatoes, chopped
3. 1 small onion, sliced
4. 2 cloves garlic, mashed
5. 1/2 teaspoon oregano
6. 1/2 teaspoon basil
7. salt and pepper
8. 2 tablespoons olive oil
Directions:
1. Combine all ingredients in a large bowl–toss to coat everything.
2. Place in foil packet, seal well.
3. Grill 25 minutes or until tender, turning every so often.
4. These could be done in the oven as well: Bake at 375º for 25 minutes, or until tender.
