Ingredients for 2 servings:
1. 1 inch piece fresh ginger, peeled, minced
2. 1/2 onion, peeled
3. 2 garlic cloves, crushed
4. 2 tablespoons honey
5. 1/2 teaspoon ground coriander
6. 1/2 cup soy sauce
7. 2 teaspoons fresh lime juice
8. fresh ground pepper
9. 1 lb pork chops or 1 lb pork, cubes
Directions:
1. Mix all ingredients except for the pork.
2. Add the pork to marinate 2 hours at room temperature (or longer in the refrigerator); turning meat occasionally.
3. If using pork cubes, place on water soaked skewers.
4. Grill until done, about 5 minutes per side.
5. Serve with rice or herbed new potatoes.
