Ingredients for 4 servings:
1. 2 tablespoons butter
2. 1 tablespoon flour
3. 1 medium onion, minced
4. 1 garlic clove, minced
5. 1 green pepper, minced
6. 1/2 cup celery, minced
7. 1/2 cup okra, sliced
8. 1 (16 ounce) can tomatoes, chopped
9. 1 bay leaf
10. 1 teaspoon dried parsley
11. 1/2 teaspoon salt (to taste)
12. 1/8 teaspoon pepper (to taste)
13. 1/2 cup water
14. 1/2 lb shrimp
15. cooked rice
Directions:
1. In a large skillet, over medium-low heat, brown flour in butter.
2. Add onion, garlic, green pepper, celery, and okra; sauté until tender.
3. Stir in tomatoes, bay leaf, parsley and salt and pepper.
4. Add 1/2 cup water, more if necessary.
5. Stir in shrimp, bring to boil; reduce heat and simmer 5 minutes,or until shrimp is done.
6. Remove bay leaf.
7. Serve over hot rice.
