Ingredients for 4 servings:
1. 1 lb carrot
2. 1 green onion
3. 1 teaspoon fresh lemon juice (about 1 wedge)
4. 2 tablespoons golden raisins
5. 1 tablespoon olive oil
6. 1/2 teaspoon ground cumin
7. 1/4 teaspoon salt
Directions:
1. Peel carrots and grate, using the large grater holes, over a medium bowl.
2. Slice green onions and add to bowl.
3. Add lemon juice, raisins, olive oil, cumin, and salt.
4. Mix well.
