Ingredients for 6 servings:
1. 2 tablespoons olive oil
2. 2 green bell peppers, cut into thin strips
3. 1 yellow bell pepper, cut into thin strips
4. 2 carrots, cut into thin strips
5. 1 (8 ounce) package fresh sliced mushrooms
6. 2 tablespoons homemade gourmet garlic basil seasoning
7. 2 teaspoons cornstarch
8. 1 cup chicken broth
9. 3 medium tomatoes, chopped
10. 1 (8 ounce) package angel hair pasta, cooked and drained
11. 1/4 cup grated parmesan cheese
Directions:
1. In a nonstick skillet, heat oil over medium-high heat; saute the peppers, carrots, mushrooms, and seasoning for 2-3 minutes.
2. In a small bowl, whisk cornstarch and broth until smooth; add to vegetable mixture in skillet.
3. Bring to a boil. Reduce heat, add tomatoes, and cook 3-5 minutes or until heated through.
4. Place warm pasta in a large bowl, spoon on vegetable mixture and garnish with Parmesan cheese if desired.
