Ingredients for 2 servings:
1. 1 tablespoon unsalted butter
2. 2 cups peeled cored, small diced apples
3. 1 cup half-and-half
4. 5 -6 ounces blue cheese, crumbled
5. 1/4 teaspoon salt, to taste
6. 1/4 teaspoon fresh ground white pepper, to taste
Directions:
1. Heat the butter in a saucepan, over a medium flame.
2. Add the apples and saute for 1 to 2 minutes, until softened.
3. Add the half & half or milk and reduce heat to low.
4. Heat and stir until the mixture begins to scald around the edges.
5. Gradually add the cheese and stir until melted.
6. Season to taste with salt and pepper.
7. Serve hot.
