Ingredients for 6 servings:
1. 6 large apples
2. 3 eggs, separated
3. 3/4 cup sugar
4. 2 tablespoons butter
5. 1 cup breadcrumbs
6. 1/2 teaspoon cinnamon
7. 1/2 cup bacardi rum
Directions:
1. Peel apples and chop fine. Add everything else. Mix well until it forms a paste.
2. Beat the egg whites until stiff. Add them to the apple mixture; mix again.
3. Pour mixture into a greased mold. Place mold in a pan of hot water (like a 13×11 cake pan). Bake at 350 for 30 – 40 minutes or until pudding is set.
