Ingredients for 6 servings:
1. 1/4 cup lemon juice
2. 1/2 cup oil
3. 1 teaspoon pepper
4. 2 apples, unpeeled, cored, sliced thin
5. 1 cucumber
6. 1 stalk celery, thinly sliced
7. 2 tablespoons onions, minced
8. 1 (16 ounce) can red salmon, drained
9. 1/8 cup olive, sliced
10. 6 cups salad greens
Directions:
1. Combine lemon juice, oil, and pepper.
2. Do not peel apples; drop apples into lemon mixture once cut.
3. Score unpeeled cucumber with tines of fork; slice thin; add to marinade.
4. Add celery and onion to marinade.
5. Break salmon into chunks; remove bones and skin; add to marinade.
6. Chill.
7. When ready to serve, place on top of lettuce greens.
