Ingredients for 3 servings:
1. 1 (9 ounce) package artichoke ravioli (from Trader Joe’s)
2. 1 lb shrimp, peeled and deveined
3. salt
4. 3 tablespoons butter (divided)
5. 0.5 (14 ounce) can chicken broth
6. 1/2 lemon (zest and juice)
7. 3 tablespoons parmesan cheese
Directions:
1. Gently boil ravioli, as directed on package and drain when done.
2. Meanwhile, dice the shrimp and season them lightly with salt.
3. In a skillet, heat 1 tablespoon butter over medium heat until browned.
4. Add shrimp and cook 3-4 minutes, until cooked through.
5. Remove shrimp from pan and wipe out remaining butter.
6. Add to pan 1 more tablespoon butter, chicken broth, lemon zest, and lemon juice.
7. Cook until reduced for a sauce and stir in last tablespoon butter.
8. Top ravioli with parmesan cheese and shrimp, then drizzle with sauce.
