Ingredients for 4 servings:
1. 1 lb asparagus
2. 1 large seedless orange (peeled and sectioned)
3. 1 tablespoon orange juice
4. 1 tablespoon red wine vinegar
5. 1 teaspoon orange zest
6. 2 teaspoons Dijon mustard
7. 3 tablespoons olive oil
8. 1/4 teaspoon ground ginger
9. salt & pepper
10. 2 tablespoons coarsely chopped toasted hazelnuts (unblanched almonds are nice too)
Directions:
1. Trim asparagus and cut in to 1-inch pieces and Cook 1 – 1 1/2 min or until tender crisp.
2. Immediately plunge into ice water.
3. Drain well.
4. Whisk together orange juice, vinegar, orange zest, mustard, olive oil, and spices.
5. Toss with asparagus and orange sections.
6. Sprinkle with toasted nuts.
