Ingredients for 12 servings:
1. 250 g pasta, pre cooked (any shape will do, macaroni, penne etc)
2. 2 tablespoons oil (I like olive)
3. 500 g good quality fresh mixed seafood (called a Marinara mix in Australia)
4. 250 g cherry tomatoes, halved
5. 12 kalamata olives, sliced
6. 4 spring onions, sliced
7. 2 tablespoons white balsamic vinegar
8. 1 tablespoon tomato paste
9. 1/4 cup good quality olive oil
10. 1/4 cup Italian salad dressing
11. 1/4 cup chopped parsley
Directions:
1. Place the oil in a non stick fry pan (or Wok) and heat the oil. Add the seafood mix and cook over a medium heat until the seafood changes colour.
2. In a large bowl add the cooked pasta shapes and the cooked seafood mix. Add the cherry tomatoes, olives and spring onions.
3. In a bowl whisk together the vinegar, oil, salad dressing tomato paste and parsley. Pour over the pasta mix and stir well.
4. Place in the fridge to chill for atleast an hour.
