Ingredients for 8 servings:
1. 1 tablespoon oil
2. 2 lbs stewing beef, cut in 1-inch cubes
3. 5 carrots, sliced
4. 1 large onion, diced
5. 1 garlic clove
6. 3 celery ribs, sliced
7. 3 potatoes, cubed
8. 1 (28 ounce) can diced tomatoes
9. 1 (28 ounce) can stewed tomatoes
10. 2 bay leaves
11. salt and pepper, to taste
Directions:
1. Heat oil in large stock pot.
2. Brown beef cubes and add the carrots, onion, garlic, celery, and potatoes in order as you chop them. This browning and sweating process really adds a wonderful flavor to the beef and veggies.
3. Add the tomatoes and bay leaves and bring to a low simmer–as low as possible to still maintain a simmer.
4. Cook for at least an hour, but longer is just fine and preferable.
