Ingredients for 20 servings:
1. 450 g baby beets
2. 150 g roasted cashews
3. 1 cup parmesan cheese, grated
4. 1 garlic clove, crushed
5. 1 tablespoon lemon juice
6. 1 pinch salt
Directions:
1. Put cashews into blender. Roughly chop.
2. Add remaining ingredients and blend.
3. Transfer mix to large bowl.
4. Cover and refrigerate.
