Ingredients for 8 servings:
1. 2 cups cooked and cooled brown rice
2. 1 (15 ounce) can black beans, rinsed and drained
3. 1/4 cup finely chopped green pepper
4. salt & freshly ground black pepper, to taste
5. 1/2 cup fat-free Italian salad dressing
6. 1 medium tomatoes, seeded and chopped
7. 8 pitted black olives
8. 2 tablespoons chopped fresh cilantro
Directions:
1. In large bowl, combine all ingredients.
2. Mix.
3. Cover with plastic wrap and chill completely.
4. Stir again before serving.
