Ingredients for 6 servings:
1. 4 lbs lean stewing beef
2. 14 1/2 fluid ounces beef broth
3. 4 tablespoons oil
4. 1 (4 ounce) can diced green chilies
5. 12 fluid ounces V8 vegetable juice
6. 4 cloves garlic, minced
7. shredded sharp cheddar cheese or monterey jack cheese
Directions:
1. Brown meat in oil and drain.
2. Add remaining ingredients except cheese and simmer over low heat, or cook in a crockpot on low setting, for 3 hours.
3. Shred meat with fork; drain excess liquid.
4. Serve on tortillas with cheese.
