Ingredients for 12 servings:
1. 1 lb broccoli floret, chopped and steamed
2. 1 russet potato, peeled and grated
3. 1 small onion, diced
4. 1/2 cup panko breadcrumbs
5. 2 eggs
6. 1/2 teaspoon black pepper
7. 1/4 teaspoon salt
8. 1/4 teaspoon cayenne pepper
9. 2 tablespoons flour
10. 1 cup shredded cheddar cheese
11. 1/4 cup canola oil
12. vegetable oil, such that it reaches a 1/2-inch depth in the pan (for frying)
Directions:
1. Place broccoli in large mixing bowl. Add the potato, onion, breadcrumbs, eggs, pepper, salt, cayenne pepper, flour, cheese and canola oil and mix well.
2. Heat vegetable oil to about 360 degrees F in a large, heavy skillet. Shape broccoli-potato mixture into 3-inch patties and fry until golden brown, about 3 minutes on each side. Dry on paper towel-lined plates, and then serve!
