Ingredients for 4 servings:
1. 1/4 cup egg substitute
2. 1 tablespoon flour
3. 2 cups shredded carrots
4. 2 scallions, minced
5. 2 tablespoons minced parsley
6. 1/2 teaspoon dried tarragon
7. 2 egg whites
8. 1 teaspoon olive oil
Directions:
1. In a large bowl, combine the egg substitute and flour. Stir in the carrots, scallions, parsley and tarragon.
2. In a separate bowl, whip the egg whites until stiff. Fold into carrot mixture.
3. Heat the oil on a nonstick griddle.
4. Drop ¼ cup mounds of batter onto the hot griddle. Flatten a bit with the back of a spatula.
5. Fry on both sides until golden brown.
