Ingredients for 2 servings:
1. 2 boneless skinless chicken breasts
2. 2 -4 slices cheese (I prefer American or mild Cheddar)
3. 2 slices ham
4. 1 (10 ounce) can cream of chicken soup
5. 3 ounces stovetop chicken flavor stuffing mix, prepared (1/2 box approximately)
Directions:
1. Preheat oven to 350 degrees.
2. Wash the chicken breasts and shake off excess water.
3. Cut a large slit in the side of each breast to create a pocket.
4. Roll 1 to 2 slices of ham and chicken together and insert in the created pocket.
5. Spray a baking dish with cooking spray and place the chicken in the pan. Pour the can of Cream of Chicken soup over then breasts, but mostly around the breasts.
6. Salt and pepper to taste. Place pan in the oven, watch from time to time so nothing burns.
7. Optional: 12 to 15 min before the chicken is done, push the chicken pieces to the edges and pour enough stuffing mix, while stirring, to create a very thick liquid. (Do not pull in any soup that is not already in the middle.). Finish cooking and then enjoy!
