Ingredients for 4 servings:
1. 1/4 cup oil
2. 1 cup chopped onion
3. 1 (14 ounce) can diced tomatoes
4. 2 cups chicken broth
5. 1 teaspoon minced garlic
6. 1 teaspoon thyme
7. 1 bay leaf
8. 1 teaspoon salt
9. 1/2 teaspoon pepper
10. 4 cups diced potatoes
11. 1 1/2 cups sliced carrots
12. 2 cups chopped chicken breasts (, 1in pieces)
Directions:
1. Heat oil in large pot, saute onions for 2 minutes.
2. Add next 7 ingredients.
3. Bring to a boil.
4. Add potatoes, carrots, and chicken.
5. Simmer until vegetables are done, about 30 minutes.
6. Thicken with cornstarch if you like a thicker stew.
