Ingredients for 6 servings:
1. 1 1/2 quarts chicken broth
2. 1 1/2 lbs boneless skinless chicken, cubed
3. 1 (14 ounce) can diced tomatoes
4. 2 medium red potatoes, peeled and diced
5. 1 large onion, chopped
6. 1 celery rib, chopped
7. 1 large carrot, chopped
8. 2 large garlic cloves, minced
9. 1 1/2 teaspoons dried marjoram
10. 1/2 teaspoon dried basil
11. 1/4 cup uncooked orzo pasta
12. 4 cups coarsely chopped curly endive lettuce
13. salt and pepper
Directions:
1. Combine all ingredients except orzo, endive, salt and pepper in slow cooker. Cover and cook on low 6-8 hours, adding orzo and endive during last 20 minutes.
2. Season to taste with salt and pepper.
