Ingredients for 4 servings:
1. 2 teaspoons olive oil
2. 1 onion, chopped
3. 2 garlic cloves, chopped
4. 1 large carrot, chopped
5. 1 stalk celery, chopped
6. 4 cups chicken or 4 cups vegetable broth
7. 1 (19 ounce) can chickpeas, drained and rinsed
8. 1 teaspoon sage
9. frozen chopped spinach (i used 4 cubes)
10. salt and pepper
Directions:
1. Heat oil over medium heat. Add onions and garlic until translucent. Add carrots and celery and cook for a few minutes.
2. Add stock, chickpeas and sage. Simmer for 15 minutes. Stir in spinach until heated through.
3. Season with salt and pepper.
