Ingredients for 4 servings:
1. 220 g thin egg noodles
2. 4 green onions, chopped
3. 1 tablespoon fresh ginger
4. 1/2 teaspoon chili powder
5. 5 cups vegetable broth
6. 2 cups water
7. 1 tablespoon reduced sodium soy sauce
8. 1 cup bok choy
9. 1 cup broccoli
10. 100 g corn kernels
Directions:
1. Prepare noodles as per direction on packet. Drain and set aside.
2. Place green onions, ginger, chilli powder, broth and soy sauce in a pot and bring to the boil. Reduce heat and simmer for 3 minutes.
3. Add Bok Coy, Broccoli and Corn and cook for 1 minute. Add noodles and cook a further minute.
4. To serve, ladel into bowls.
