Ingredients for 8 servings:
1. 1/4 cup sherry wine vinegar
2. 2 tablespoons fresh lime juice
3. 1 tablespoon minced shallot
4. 1 tablespoon chopped fresh cilantro
5. 1 teaspoon chopped fresh thyme
6. 1 tablespoon chopped fresh parsley
7. 2 canned chipotle peppers, drained and minced
8. 1 garlic clove, minced
9. 1 teaspoon maple syrup
10. 1 cup olive oil plus 2 tbsp. olive oil
Directions:
1. In a medium bowl, combine all of the ingredients except the olive oil, then gradually whisk in the olive oil until the dressing lightly thickens. Taste and adjust the seasoning as necessary.
2. Refrigerate leftovers.
