Ingredients for 4 servings:
1. 1 tablespoon olive oil
2. 1 red bell pepper, cut into strips
3. 1 orange bell peppers or 1 yellow bell pepper, cut into strips
4. 1 red onion, cut into 1/2 inch wedges
5. 2 garlic cloves, minced
6. 1/2 teaspoon turmeric
7. 1/2 teaspoon cumin seed
8. 1/2 teaspoon ground cumin
9. 1 teaspoon salt
10. 1/2 teaspoon chili powder
11. 1 dash cayenne pepper
12. 1/2 teaspoon ground coriander
13. 2 cups vegetable stock
14. 2 cups couscous
15. 2 tablespoons butter
Directions:
1. Heat olive oil over medium heat.
2. Add peppers, garlic and onion and saute until onions are translucent.
3. Add spices and stir well to coat.
4. Reduce heat to low and add 2 cups couscous, then the vegetable stock.
5. Keep on heat, stirring until all liquid is absorbed.
6. Remove from heat, add in butter, mixing until melted.
7. Fluff with fork and serve.
