Ingredients for 4 servings:
1. 3 medium bell peppers, sliced (assorted colors)
2. 2 cups cooked chicken, cubed
3. 1 1/2 cups corn
4. 1 green onion, sliced
5. 2 tablespoons apple cider vinegar
6. 2 tablespoons olive oil
7. 1 tablespoon chopped parsley
8. 1 garlic clove, minced
9. 1/2 teaspoon dried oregano
10. salt and pepper
Directions:
1. Combine peppers, chicken, corn and green onions in a large bowl.
2. Combine remaining ingredients, except the salt and pepper. Pour over chicken mixture and toss.
3. Season to taste with salt and pepper.
