Ingredients for 24 servings:
1. 1/4 cup rice flour
2. 1/2 cup potato flour
3. 1/4 cup cornstarch
4. 1 cup powdered milk
5. 1 cup sugar
6. 1/2 teaspoon baking powder
7. 3 eggs
8. 1 pinch salt
9. 1/3 cup sweetened flaked coconut
10. 1/2 cup butter, melted and cooled
Directions:
1. Heat oven 375 degrees.
2. Brush 2madelene cookie pans with melted butter and sprinkle flour generously.
3. Mix all the rest of the ingredients with a hand mixer.
4. Spoon the batter into madelene cookie pans.
