Ingredients for 6 servings:
1. 16 ounces pasta (I use whole wheat penne)
2. 1 onion, chopped
3. 2 cups mushrooms, sliced
4. 2 garlic cloves
5. 2 teaspoons extra virgin olive oil
6. 2 cups plain yogurt
7. 1/2 cup gorgonzola, crumbled
8. 1/2 cup parmesan cheese, grated
9. 2 tablespoons sherry wine
Directions:
1. Boil and drain pasta.
2. Meanwhile, saute mushrooms, onions and garlic in olive oil until softened.
3. Warm yogurt, sherry, and cheeses in separate pan.
4. Combine pasta, cheese sauce and mushroom mixture.
