Ingredients for 2 servings:
1. 1 lb large shrimp
2. 1/2 cup flour
3. salt and pepper
4. 2 eggs
5. 1/2 tablespoon water
6. 2 garlic cloves
7. 2 cups panko breadcrumbs
8. 1 tablespoon fresh parsley, chopped
9. 1/2 cup olive oil
10. 1 lemon
Directions:
1. Peel, devein, and butterfly shrimp.
2. On a plate, mix flour with salt and pepper to taste.
3. On another plate, mix the bread crumbs with the parsley.
4. In a bowl, lightly beat eggs and water.
5. Using a garlic press, add garlic.
6. Holding tail, place each shrimp into the flour mixture, then the egg mixture, and then the bread crumb mixture.
7. Heat oil in skillet, pan-fry shrimp tail up for about two minutes, until nicely browned.
8. Flip shrimp and repeat.
9. Drain on paper towel-lined plate.
10. Serve lightly sprinkled with coarse salt and lemon slices.
