Ingredients for 4 servings:
1. 1 cup water
2. 1 cup 1% low-fat milk
3. 1 cup quinoa, rinsed
4. 1 tablespoon butter
5. 1 tablespoon honey
6. 1 teaspoon vanilla extract
7. 1 cup frozen peach slices
8. 1/2 teaspoon cinnamon
9. 1/4 pecan halves, toasted
Directions:
1. Combine all ingredients in saucepan over medium high heat.
2. Bring to a boil, then reduce to a low simmer. Cover and cook for 15 minutes.
3. Remove from heat and allow to sit for an additional 15 minutes.
4. Top with toasted pecans and serve.
