Ingredients for 8 servings:
1. 1 small onion, finely chopped
2. 1 teaspoon vegetable oil
3. 1/2 cantaloupe, peeled seeded and diced finely
4. 1/2 honeydew melon, peeled seeded and diced finely
5. 1/4 cup fresh cilantro, chopped finely
6. 3 jalapenos, chopped finely
7. 2 tablespoons lime juice
Directions:
1. In a small pan sauté the onion in oil until soft. Lay aside and let cool.
2. Combine all the other ingredients and stir in the onions.
3. Refrigerate for a couple of hours to let the flavors blend together.
