Ingredients for 4 servings:
1. 1 tablespoon oil
2. 1 medium brown onion, chopped coarsely
3. 2 garlic cloves, crushed
4. 400 g swiss brown mushrooms, sliced thinly
5. 1 tablespoon plain flour
6. 1/2 cup dry red wine
7. 3 teaspoons soy sauce
8. 2/3 cup vegetable stock
9. 2/3 cup light sour cream
10. 1 tablespoon fresh oregano, coarsely chopped
11. 1 tablespoon fresh sage, finely chopped
12. 600 g fresh gnocchi
Directions:
1. Heat oil in large frying pan.
2. Cook onion, garlic and mushrooms until just tender.
3. Add flour and stir through for 1 minute.
4. Add wine, soy sauce, stock and cream stirring until sauce thickens slightly.
5. Stir in herbs.
6. Meanwhile cook gnocchi uncovered in a large pan of salted boiling water, until gnocchi rise to the surface are just tender. Drain.
7. Add gnocchi to mushroom sauce and gently fold through to combine.
