Ingredients for 6 servings:
1. 2 tablespoons butter
2. 1/2 cup chopped onion
3. 1/2 cup diced celery
4. 8 ounces fresh mushrooms
5. 2 tablespoons flour
6. 2 cups milk
7. 1 cup shredded cheddar cheese
8. 1 (10 3/4 ounce) can cream of potato soup
9. 1 (2 ounce) jar chopped pimiento
10. 1/4 teaspoon salt
11. 1/4 teaspoon pepper
12. 1/2 teaspoon hot sauce
13. 12 ounces oysters
Directions:
1. melt butter in dutch oven.
2. add onion and celery and cook 8 minutes.
3. add mushrooms and cook 5 more minutes.
4. add flour and cook 1 minute stirring constantly.
5. gradually stir in milk and cook stirring often for 5 minutes.
6. reduce heat to low and stir in cheese and next 5 ingriedients.
7. cook for 3 minutes stirring constanly.
8. add oysters and oyster liquer simmer 3 minutes and serve with oyster crackers.
